Baked Potato with Egg on Top

IMG_20181125_151854_806Another fantastically easy recipe I came across on Buzzfeed Tasty, to brunch on my delicious Sundays! Although, I made a little change. Their first step was to bake the potatoes for an hour, but I boiled them!

Serves three. Although I made only one for myself. Solo eating! But believe me, they were scrumptious!

 

 

INGREDIENTS
3 russet potatoes
2 tablespoons olive oil
2 teaspoons salt
1 tablespoon butter
1 cube grated cheese
1 tablespoon bacon, diced or chicken nuggets diced
3 eggs
2 teaspoons salt
1 teaspoon pepper

INSTRUCTIONS

  • Boil the potatoes. I did it in a pressure cooker.
  • Once cooled, cut the potatoes vertically, scoop out the inside, and save the scooped out insides (for mashed potatoes, etc.).
  • Spread butter on the inside of each scooped out potato.
  • Add cheese, bacon (or chicken nuggets), one egg per potato. Top with salt and pepper.
  • Bake 25 minutes, until the egg white has cooked through.
  • Serve warm!
